What is Le Comptoir, the restaurant at Les Échasses?

Le Comptoir is the restaurant at Les Échasses, located on the estate in Saubion. It serves fresh, local, seasonal cooking inspired by produce from the estate’s permaculture vegetable garden and orchard, with a cellar that includes organic and natural wines. The menu changes with the seasons, the harvest and what is available. Capacity is deliberately limited to keep an intimate atmosphere.
